A GUIDE OF THE
REMEDIES HIDDEN INSIDE THE VEGETABLES MARKET
Vegetables are the basis of vegetarian
eating, but also of good health and resistance to illness. Here is the
most important 'items' of vegetarian menu, and the ones to choose to fuel
some energy.

Cereals. Full of fibres, complex
carbohydrates, vitamin B1, B6 and E, last but not least proteins. The
ideal diet foresees 100 grams of cereals on main meals.

Legumes. Full of proteins,
carbon hydrates, minerals and vitamins. Easen the good functioning of
large intestine, and are useful for some illness prevention.

Vegetables. Rich of vitamins (mostly
vit. C and betacarotene), minerals and fibres. Because of the small
presence of proteins they aren't much energetic. Yellow vegetables are
particularly abundant of betacarotene. Chilli pepper is a vitamin C 'bomb'.

Fruit. When fresh is rich of
vitamin C, betacarotene, minerals and fibres. Dry fruit has plenty of
sugars, though scarce of lipids and proteins. Oily fruit (almonds,
walnuts, peanuts, pistachios, hazelnuts) contain a high rate of proteins
and lipids, and are rather energetic.

Beverages. Every day a litre and a
half of water at least. Important also lime-fruits squashes and
fruit-juices.
